A Day at the Beach

We had some wonderful meals! 


Chicken, Wild Rice, Sausage casserole (serves 10) from Cheryl

4-5 (depending on size) boneless chicken breast halves
1 box Uncle Bens wild & long grain rice
1 lb. bulk sausage (mild sage flavored)
1 3oz can whole mushrooms, (or stems and pieces)
2 cans cream of mushroom soup
½ teaspoon of Worcestershire sauce
¼ cup melted butter or margarine
1 cup seasoned bread crumbs

Cook chicken and cut into bite size pieces. Prepare rice as package directs. Brown and drain sausage.
Combine rice, sausage, mushrooms, soup, and Worcestershire sauce.
In a 9x13 layer one half of the rice picture, then spread chicken pieces over top.
Next spread the remaining rice mixture over the chicken.
Mix seasoned bread crumbs with melted butter and spread over top of casserole.
Bake at 375 degrees for 30-40 minutes.

Freezes well before baking. Just defrost completely, then bake as directed. 

(For the beach, I prepared chicken and sausage ahead and then froze them in separate containers to cart to Duck in cooler. Thawed while there and then put casserole together)


Ground Beef “Stroganoff” from Cheryl (Serves 8-10- can easily halve)
1-1 ½ lb. ground beef ( I use chuck, but any will do)  browned and drained
1 bag (16 oz., but 12 oz. will do) medium egg noodles cooked and drained
2 cans tomato soup
2 cans French onion soup
1-2 three oz. cans of mushrooms (I used one)
¾ -1 cup cooking wine (or any red wine on hand)
Mix all together and spread in a 9x13 pan  Any large baking dish will work, I just like the 9x13)
Spread grated sharp cheddar cheese to cover top
Bake at 350 degrees for approximately 50 minutes

Freezes well before baking. Just defrost completely, then bake as directed






Judy Sturm’s Chicken in Wine from Carol

Combine:
1 can undiluted cr of mushroom soup
1 can onion soup
1 cup dry white wine

Combine and pour over 2-3 lbs of chicken

Cover and Bake 300 for 2 ½ hours

Elvis cake from Carol

3 c sugar
2 sticks butter
7 eggs room temp
3 cups cake flour sifted twice (2T corn starch with flour to make a cup,sift 3x)
1/2 pt whip cream
2t. vanilla

Cream sugar and butter
Add eggs one at a time
Add ½ flour
Add whip cream

Add rest of flour and vanilla
Bake in a cold oven  350….60-70 min

Cool 5 min
